Drawing on the 2026 Wellness Real Estate Report, Heleri explores how F&B creates value in hospitality, and where the real opportunity now lies:

  • How does guest profile and mix shape F&B strategy from an operational perspective?
  • Properties with a Minor wellness component are showing stronger F&B revenue and profit growth. What's the magic behind it, and what can Major Wellness properties learn?
  • Is room service dead, or just misunderstood? Heleri makes the case for its untapped potential as an important F&B touchpoint, when thought through well.
  • What's next for F&B trends? Heleri unpacks the changing economics of beverage and its impact on staffing and operations.

Heleri Rande"My overall advice would be not to design food and beverage as a standalone revenue department. Instead, you need to ask how it contributes to the overall guest proposition. For a Major Wellness property, that might mean ensuring the culinary experience complements the scale of the wellness program, and for a Minor Wellness, it may become one of those defining brand experiences that differentiates the property. Ultimately, successful wellness hospitality isn't about having more restaurants or bigger kitchens, it's about creating one coherent experience where accommodation, wellness and food all reinforce the same story."
