Nijhof, Group Director of Hospitality & Guest Experience, Value Retail Management; Ronit Copeland, Managing Director, Copeland Hospitality addressed the complex topic of how to best optimise the non-revenue generating spaces. Recommendations have been raised on what hotels can learn from the retail sector, looking at measuring revenue per sqm, co-branding with fashion and retail brands. Another thread of the talks was how the creation of foodtainment spaces as dining & nightlife attractions can contribute to the revenues outside the bedroom.
